Lemon Cupcakes


  • 2 cups Self raising flour, sifted
  • 1 cup caster sugar
  • 125 g butter, melted and cooled slightly
  • 1/ 2 cup milk
  • 2 eggs, lightly beaten
  • 1/4 cup freshly squeezed lemon juice
  • finely grated zest of one large lemon


  • Preheat oven to 200°C (180°C for fan forced oven)
  • Line a 12 hole muffin pan with cupcake cases
  • Mix the flour, sugar and zest together in a medium mixing bowl
  • Add in the butter, milk, eggs, and juice and whisk well together until batter is smooth (not more than 1 minute)
  • Pour in equal amounts of the batter into each cupcake case, making sure not to over fill.
  • Place in the oven and bake for 12 mins or until cooked through. (Cupcakes should spring back up when lightly pressed)
  • Remove from oven and cool on a cooling rack before icing

Simple Lemon Buttercream Icing

  • 125g of butter, softened
  • 1 1/2 cups of Icing sugar
  • 1 tablespoon hot water
  • 1 tablespoon freshly squeezed lemon juice


  • Beat the butter until pale and creamy
  • Add in the sugar and beat until creamy
  • Add in the hot water and beat for 30 seconds
  • Add in the juice and beat for a further minute
  • Scoop into piping bag and pipe onto cupcakes using choice of piping tip.
  • Sprinkle with grated lemon zest
