Easy Chocolate Cake
Ingredients
- 1 and 3/4 cups self raising flour
- 1 teaspoon baking powder
- 1/2 cup unsweetened pure cocoa powder
- 1 cup sugar
- 250ml milk
- 3 eggs, lightly beaten
- 1/2 cup vegetable oil
Method
- Preheat oven to 160°C (140°C fan forced oven)
- Grease a round baking tin and line its base and sides with baking paper
- Sift flour, baking powder and cocoa into a large mixing bowl
- Add in the sugar, milk, eggs and oil
- Using an electric hand mixer at low to medium speed, beat the ingredients together until just combined then increase the speed of the mixer to high and beat until the mixture changes to a lighter colour (this should take less than a minute)
- **If there is no electric hand mixer, use a whisk or wooden spoon and mix until the batter is smooth. Make sure not to over mix (over-mixing the batter will result in a dense cake and we don’t want that)
- Pour batter into prepared tin and bake for 35- 40 minutes or until cooked when tested
- Remove from the oven and let the cake cool slightly in the tin for about 10 minutes then turn onto a wire rack to cool completely before icing
Chocolate Icing (Optional)
Ingredients
- 125g butter, softened
- 1 and 1/2 cups icing sugar
- 60g dark chocolate, melted and cooled + 40g extra for drizzle
Method
- Beat the butter in a small mixing bowl until light and creamy, add in the icing sugar and beat until fluffy and light. Add in the melted chocolate and beat further until well combined
- To assemble the cake
- Slice the top of the cake if needed to level it out
- Slice the cake horizontally into two even pieces using a serrated knife
- Place the bottom piece on a serving plate and spread half of the icing mixture over it. Top it with the remaining piece and ice the top with the remaining icing. Drizzle the extra melted chocolate around the top edges of the cake allowing it to drip down the sides. Decorate with strawberries and serve
