Try this yummy Cheese and Onion Scones recipe Made in Geno’s Kitchen

Ingredients
- 3 1/2 cups self raising flour
- 1/8-1/4 teaspoons each of cayenne pepper and mustard powder (depending on taste)
- 1/2 teaspoon salt
- 60 g cold butter, diced
- 1/2 cup finely sliced spring onions
- 1 cup coarsely grated cheddar cheese
- 1 1/2 cup buttermilk
Pre heat oven to 230°C (210 °C fan forced oven).
Lightly dust a baking tray with a bit of flour.
Sift flour and spices into a mixing bowl. Add in the salt and whisk to combine.
Add in the butter and rub into the flour using fingertips.
Add in the onions and cheese and toss to coat evenly with the flour.
Make a well in the center of the mixture and add in the buttermilk.
Use a flat blade knife or spatula to mix until a dough forms.
Turn onto a floured surface and flatten slightly to about 2cm thick.
Cut into rounds using a dough cutter. Arrange on the prepared tray.
Bake for 12-15 mins or until cooked.
Remove from oven and turn the scones onto a cooling rack to cool.
Serve warm with butter.

Note; if buttermilk is unavailable, Measure out 1 cup of milk and add juice of 1 lemon in. Stir and let the mixture sit for a few minutes. When the milk has curdled, top it up with some more milk to make the required amount and use as directed.
