Try this Orange-Syrup and Poppy Seed Loaf recipe Made in Geno’s Kitchen

Ingredients
For the loaf:
- 2 cups self-raising flour
- 1 teaspoon mixed spice powder
- 2/3 cups of caster sugar
- Finely grated rind of 2 medium oranges
- 1 tablespoon poppy seeds
- 1/2 cup sunflower oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
For the syrup:
- 1/2 cup freshly squeezed orange juice
- 2 1/2 tablespoons caster sugar
- 1/2 tablespoon thinly sliced orange peel
Method
Preheat oven to 180°c (160°c fanforced)
Grease and line a loaf tin (24 cm×15cm top measurement)
Sift flour and spice into a mixing bowl. Add in the rind, sugar and poppy seeds. Mix together and make a well in the center.
In a separate bowl whisk together the oil, eggs, vanilla and buttermilk.
Add the oil and eggs mixture into the flour mixture and fold until just combined. Pour batter into prepared tin and place in the oven. Bake for 45 minutes or until cooked when tested.
Meanwhile make the syrup. Add all the syrup ingredients into a small saucepan and cook over medium heat until all the sugar has dissolved.
When the loaf is cooked, remove from the oven and gently drizzle the syrup over its top while still hot and still in baking tin. Allow the syrup to be absorbed for about 10 minutes then remove loaf from baking tin onto a wire rack to cool.
Serve warm or cold.
Enjoy!
