Mango Cake

Ingredients
- 150g butter at room temperature
- 1/2 cup sugar
- 1 teaspoon vanilla essence/extract
- 2 eggs
- 1/3 cup mango puree
- 1 1/3 cup self-raising flour
- 2 ripe mangoes, peeled and sliced thinly into wedges.
Method
- Preheat oven to 180°C (160°C fanforced)
- Grease and line base and side of desired tray, (a slice tin or an 18cm round cake tin)
- Mix butter, sugar and vanilla until creamy
- Add eggs one at a time and mix well to combine
- Add mango puree and mix
- Add flour and mix until just combined
- Pour mixture onto lined baking tray
- Arrange the mango slices on the batter
- Bake in 180 degree Celsius oven for about 20-35 mins
