Basic Cheesecake
Ingredients
Base
- 100g plain sweet biscuits, crushed
- 80g butter, melted
Filling
- 500g cream cheese, softened
- 2 × 395g tins of condensed milk
- 3/ 4 cups freshly squeezed lemon juice
- 3 teaspoons powdered gelatin
- 1/4 cup hot water
Method
- Grease the base and sides of a round springform tin
- Mix the crushed biscuits with butter in a bowl until well combined; press the biscuit mixture onto the base of the prepared tin; Place in the fridge until needed
- Place the hot water in a heatproof bowl and sprinkle the gelatin over. Let stand for a couple of minutes then stir to dissolve the gelatin; Put aside till needed
- Put the cream cheese in a medium mixing bowl and beat until smooth.
- Add in the condensed milk and lemon juice and beat until very well combined; keep beating while slowly pouring the gelatin mixture in. Beat further until well combined
- Pour the cream cheese mixture over the biscuit base in the tin; Level the top and place back in the fridge to set overnight;
- Serve topped with fresh fruits and fresh whipped cream
